The Cup

Sweet with tart fruit acidity, ripe strawberry and rich caramel flavors.

During the harvest, Jesus Camayo employs 25 pickers to help harvest Finca La Dorada. Every 21 days the entire farm is harvested and only the ripest cherries are collected using a refractometer to ensure prime maturity and development of the sugars. Once harvest, coffee is fermented for a period of 24 to 26 hours in cement tanks. After this, cherries are brought to a parabolic dryer for a period of 25 to 30 days and then finished on a mechanical dryer at a maximum of 32° C to ensure an even and balanced moisture content.
